CLAIRETTE DE DIE - Muscat à Petits Grains, Clairette Blanche
Geographical Situation : The Diois vineyard (Rhône Alpes) is situated on
the banks of the Drome valley, between the Drôme
provençale and the foothills of the Vercors.
Sol : Argilo-calcaire
Vinification : Naturally effervescent, sweet and fruity white wine elaborated according to the "Méthode Ancestrale Dioise". After pressing the grapes, the juice is kept cold. Naturally, slowly and at low temperature, the fermentation begins in vats. At mid-fermentation, the wine is bottled without the addition of tirage liqueur. The resumption of fermentation in the bottle, also called "prise de mousse", takes place at 12°C and lasts at least 4 months. By excess pressure, resulting from this foaming, fermentation will naturally stop around 7° alcohol, leaving residual sugars entirely from the harvest at optimal maturity. The deposit is removed by controlled pressure transfer and filtration in order to maintain the pressure naturally acquired during the foaming process.
Color : Brilliant robe with golden reflections, fine bubbles.
Nose : Explosive bouquet of subtle aromas of Muscat, exotic
fruits, with floral notes of rose and white flowers
Mouth : Faithful to the nose. At the same time balanced, complex
and light, aromatic persistence on the fruit and final on
the freshness.
Recommendations : Very pleasant as an aperitif, with foie gras or to accompany a dessert: fruit cup, galette des rois, raspberry charlotte...
